This wine is for the Tolerant Vinotype who enjoys stronger flavors and would avoid sweetness. Of course, it is also for anyone who loves Cabernet Sauvignon!

Variety: 85% Cabernet Sauvignon, 13% Merlot, and 3% Petite Sirah

Tasting Notes:

The wine is more intense with darker violet hues.  The aromas have characteristics of blackberry, cassis, and plum with elements of vanilla and cedar.  The wine has a fuller body with flavors of darker fruits coupled with peppercorn, clove, and anise, which lend an earthier profile that is balanced and has a long finish.

Food pairing suggestions:

This wine would go well with grilled salmon with a dill butter sauce, roasted chicken with garlic and rosemary, or rib eye Philly cheese steak sandwich.


 

 

Description

About the grapes

These grapes come from vineyards on the east side of the northern part of the San Joaquin Valley of California.  The fruit benefits from the deep sandy loam soils that are comprised mainly of decomposed granite from the Sierra Nevada Mountains.  Warm sunny days and cool nights with breezes coming from the San Francisco Bay and the Delta waterways allow the fruit to mature and have a proper balance between fruit character and structure.
